An efficient restaurant layout is one where staff take the fewest steps, food moves in one direction from prep to plate to table, and every square foot either seats a guest or earns its keep. The starting point is a space split: roughly 60% of your floor to the dining room and 40% to the kitchen, storage, and back-of-house - then you refine from there based on your concept. Get the flow right on paper and you'll save on labor and mistakes every single shift for the life of the lease.
Start with the front-to-back split
Before you place a single table, divide the total square footage. A full-service restaurant typically runs 60/40 dining to back-of-house; a fast-casual spot with a smaller menu can push toward 70/30 because the kitchen is simpler.

Design the kitchen around one-directional flow
The most common kitchen mistake is a line where cooks cross paths and backtrack. Lay out the stations so product moves in a straight or L-shaped path: receiving, to storage, to prep, to the cook line, to plating and the pass. Dishwashing sits near the exit from the dining room so bus tubs don't cross the clean-food path.
Give each cook a station they never have to leave mid-service. The classic standard is about 18 to 24 inches of working width per cook and enough aisle - 36 to 42 inches - for two people to pass. Cramp the line and you cap your ticket times no matter how good the crew is.
Walk the path a plate takes from the fridge to the guest. Every time it changes direction or crosses another path, you've built in a delay. Straighten those paths on paper before you pour concrete.
Seat the dining room for turns and comfort
Seating density is a direct lever on revenue, but pack too tight and guests won't return. Plan for roughly 15 square feet per seat for fine dining, 12 for full-service casual, and as little as 10 for fast-casual. Mix table sizes to match your real party sizes - too many four-tops sitting two guests wastes capacity.
Leave clear aisles of at least 36 inches for servers and 44 inches for main traffic paths. Keep an ADA-accessible route and seating. And put your point of sale where servers reach it without crossing the dining room - a well-placed station saves dozens of steps an hour.
